Sweet Plantain Banana Canoes

Ingredients:

  • 4 Ripe Sweet Plantains

  • 1 Tbsp Nutritional Yeast

  • Slow Cooker Cuban Carnitas (Recipe here)

  • Non- Sticking Spray

  • Aluminum Foil

Directions:

  1. Preheat oven to 350 degrees.

  2. Peel Plantains. Cut the plantain down the middle without passing through to the other side

  3. Get aluminum foil and spray with non-sticking spray. Wrap plantain in aluminum fol and place in baking sheet.

  4. Bake for 40 minutes or until tender

  5. Remove plantains from foil carefully (its super hot). Open plantain into a canoe and place carnitas on top. Add nutitional yeast

  6. Can also eat with a salad on the side.
