Crock Pot Pumpkin Chili
Ingredients:
1 Onion chopped
1 lb Lean Ground Turkey
1 Tbsp. Chili Powder
1 Tbsp. Cumin
1 Tsp. Garlic Powder
1 Tsp. Onion Powder
1 can Pumpkin Puree
1 (15oz) can Black Beans
1 (15oz) can Pinto beans - I didn’t have so used Lentil
2 (15oz) can Fire Roasted Tomatoes
2 Stalks Celery
1 Tsp. Pumpkin Spice
1 cup Water
Salt & Pepper to taste
Your favorite chili toppings
Directions:
In a large sauce pan, saute the onions and bell peppers with some coconut oil. Cook until tender.
In crock pot place all ingredients, except chili toppings.
Add the onions and bell peppers once they are done cooking.
Cook for 2 hours on low.
Serve and Enjoy!
You can serve with a baked potato or a salad.
