Crock Pot Pumpkin Chili

Ingredients:

  • 1 Onion chopped

  • 1 lb Lean Ground Turkey

  • 1 Tbsp. Chili Powder

  • 1 Tbsp. Cumin

  • 1 Tsp. Garlic Powder

  • 1 Tsp. Onion Powder

  • 1 can Pumpkin Puree

  • 1 (15oz) can Black Beans

  • 1 (15oz) can Pinto beans - I didn’t have so used Lentil

  • 2 (15oz) can Fire Roasted Tomatoes

  • 2 Stalks Celery

  • 1 Tsp. Pumpkin Spice

  • 1 cup Water

  • Salt & Pepper to taste

  • Your favorite chili toppings

Directions:

  • In a large sauce pan, saute the onions and bell peppers with some coconut oil. Cook until tender.

  • In crock pot place all ingredients, except chili toppings.

  • Add the onions and bell peppers once they are done cooking.

  • Cook for 2 hours on low.

  • Serve and Enjoy!

    • You can serve with a baked potato or a salad.
